Ilegal is a perfect balance of espadin agave flavors and light smoke. We believe that mezcal is about the agave first, with smoke being a subtle accent. The result is a mezcal that is true to tradition and beyond compare. As with the (previously reviewed) resposado and joven expressions, Ilegal’s anejo is also mellow and elegant, although having spent 13 months in American and French oak, it’s richer. The barrel aging contributes lovely aromas of honey and vanilla, which are echoed on the palate, along with a surprising flowery note, a suggestion of smoke and a spiced finish.Aromas of charred root vegetables and campfire are pungent in the nose. Starting out super salty, the flavors quickly give way to intense baking spice and cedar smoke while slowly revealing hints of fruitiness and peat.
