• Agave Source: Espadin, fully ripe (10 years) / Tlacolula Valley, Oaxaca
• Cooking: Traditional conic wood/volcanic stone ovens for 72 hrs.
• Milling: Traditional stone wheel process
• Water source: Natural spring (Tlacolula)
• Fermentation: Natural in wooden vats
