Cascahuín Tequila

Some distilleries make tequila. Cascahuín protects it.

Since 1904, the Rosales family has been producing tequila from their single estate in El Arenal, Jalisco — a highland valley so central to agave history that the region has been officially designated the "Gateway to Agave." Five generations in, nothing has moved. Not the family. Not the distillery. Not the standards.

At the center of it all is Master Distiller Salvador "Chava" Rosales, grandson of founder Salvador Rosales Briseño and the living embodiment of what this distillery stands for. Chava didn't inherit a brand — he inherited a philosophy. Under his stewardship, Cascahuín has become one of the most respected names in traditional tequila production, trusted by bartenders, collectors, and agave purists who know exactly what they're looking for. His approach is deceptively simple: honor the agave, trust the process, and never let a shortcut touch the still.

Cascahuín operates under NOM 1123, where every batch is built from Blue Weber agave harvested from the Rosales family's own fields or sourced from a tight circle of trusted growers in the Valles region — never from outside it. No diffusers. No additives. No compromise. The agave is brick-oven roasted, slowly fermented, and bottled as it is: a transparent expression of the land, the plant, and more than a century of hard-won craft.

The name itself tells the story. Cascahuín derives from a pre-Hispanic phrase meaning "Mountain of Light" — a reference to the nearby peak where lightning strikes the ore-rich earth during storms. That same energy runs through the liquid: vivid, alive, and utterly unfiltered.

The lineup spans a classic 40% blanco through a bold 48% Plata bottled straight from the still, a rare Tahona-milled expression crushed by volcanic stone the way it was done before industrialization changed everything, and a rotating series of limited releases that push the boundaries of what traditional tequila can be — without ever losing the thread back to where it started.

If you're done with mass-produced tequila, this is where you start paying attention.
