El Viejito: A Jalisco Distillery Since 1937
In the highlands of Jalisco, the agave heartland of Mexico, El Viejito Tequila has been making tequila the hard way for nearly 90 years. Founded in 1937, this family-run distillery operates at a scale that allows something most mass-market brands have long abandoned: genuine craft control at every step.
The production philosophy is traditional and deliberate. Agave piñas are slow-roasted in brick ovens, not autoclaves, which draws out natural sweetness over many hours rather than forcing it quickly under pressure. Fermentation happens in open-air tanks, where local ambient yeast influences the flavor in a way you simply can't replicate in a closed system. Distillation runs through copper pot stills, prized for their ability to produce a cleaner, richer spirit than stainless alternatives.

What Is Extra Añejo Tequila?
Extra Añejo is the highest official age classification in tequila, aged a minimum of three years in oak barrels under 600 liters. Established by the CRT (Consejo Regulador del Tequila) in 2006, it was created specifically to recognize tequilas that achieve whiskey-like depth and complexity through extended aging.
Blanco
Unaged or <2 months. Pure agave forward.
Reposado
2 months – 1 year. Light barrel influence.
Añejo
1–3 years. Rich oak character emerges.
Extra Añejo
3+ years. Cognac-like complexity.
Tasting Notes: Maddie Jager's Selection
Nose
Dried fruit opens first, raisins, fig, apricot. Behind it: caramel, baking spice, and vanilla bean. A note of toasted almond lingers underneath. Inviting and warm, with enough complexity to reward a long inhale.
Palate
Velvety and full-bodied. Honey and dark chocolate dominate the entry. Leather and espresso appear mid-palate, followed by cinnamon, nutmeg, and a subtle agave sweetness that somehow survives three-plus years of oak aging.
Finish
Long and warming. The sherry-like dried fruit character echoes into a finish of toasted oak and mild spice. More reminiscent of a fine Cognac than a typical tequila, which is exactly the point of Extra Añejo done right.
Our Take
A genuine sleeper in the premium Extra Añejo category. El Viejito's heritage production methods, brick ovens, open fermentation, copper stills, give this bottle a depth that many better-known brands can't match at this price point.
Best enjoyed neat, at room temperature.

How to Enjoy El Viejito Extra Añejo
🥃 Neat — The Right Way
Room temperature, in a copita or Glencairn glass. Allow it to breathe for two minutes. The nose opens significantly. No ice, you'll lose the dried fruit and leather notes entirely.
💧 A Few Drops of Water
If the proof feels warm, 2–3 drops of still water opens the honey and almond notes dramatically without stripping the complexity. The classic tasting technique for premium aged spirits.
🍹 Elevated Old Fashioned
2 oz El Viejito Extra Añejo, 1 tsp agave nectar, 2 dashes chocolate or mole bitters, one large ice cube, orange peel garnish. The espresso and dark chocolate in the tequila plays off chocolate bitters perfectly.
🍖 Food Pairings
Dark chocolate (70%+), aged manchego, Oaxacan mole, slow-roasted pork, roasted nuts and dried figs. The tequila's natural dried fruit and nut character echoes all of these beautifully.

Is El Viejito tequila additive-free?
Yes, El Viejito is produced without added colorings, flavorings, glycerin, or sweeteners. The flavor profile you taste in the Extra Añejo Maddie Jager's Selection, Reposado, and Plata comes entirely from the agave, the production process, and the barrel aging.
What makes Jalisco Highland tequila different?
Blue Weber agave grown at higher elevation in the Jalisco highlands typically takes longer to mature (7–12 years vs. 5–7 for lowland agave), which produces more complex, fruitier, and sweeter flavors. The highland terroir, different soil, climate, and elevation, imparts a distinctly floral, fruity character that differs from the more earthy, mineral profile of lowland/valley tequilas.
How is Extra Añejo different from regular Añejo?
Añejo is aged between 1 and 3 years; Extra Añejo is aged over 3 years. The extended time in barrel produces deeper oak integration, more concentrated dried fruit character, less obvious agave freshness, and a texture closer to cognac or aged whisky. El Viejito's Maddie Jager's Selection sits well into Extra Añejo territory at 3+ years.
Should I add ice or water to Extra Añejo tequila?
Ideally, neither, especially on a first taste. Neat at room temperature in a copita or Glencairn glass lets you appreciate the full aromatic complexity. If the proof feels warm, 2–3 drops of still water can open the nose beautifully. Ice cools the spirit and suppresses the volatile aromatic compounds that make an aged tequila worth the price.
