Owner of Café Pacifico, Sydney, one of the greatest Tequila Bars on the southern Hemisphere, Phil Bayly was born and raised in Adelaide, South Australia.
Starting in the industry in the '80s in Amsterdam he traveled extensively promoting Tequila. Café Pacifico Sydney has the only ‘Disctinctivo T' from the Tequila Regulatory Board of Mexico, in the Southern Hemisphere.
Phil was awarded Bar Operator of the year (single Venue) 2005 and ‘Outstanding Contribution' 2008 at the Australian Bar Awards.
